Kassandra was born on the coldest Friday in Long Island, NY. It wasn't easy keeping her in long enough to cook because she was determined to arrive early, but by the bless of God she arrived at exactly 37 weeks, thee weeks before her Christmas's due date. She rolled over at 10 days, sat up at 4 months and crawled at 7 months. She anxious to sign and talk to let the word know about the fire that burns in her beautiful grayish hazel eyes.

My Baby food Recipes
My yummy for the whole family split peas recipe:
1 pound of split peas
3 strips of bacon fat removed and chopped
3 garlic cloves chopped
1 onion chopped
1 sweet potato chopped
1 regular potato chopped
2 medium carrots chopped
4 celery starks chopped
A handful of fresh parsley, oregano and thyme chopped. It could be dried
5-6 cups of low sodium chicken broth
Preparation:
put two TBS of olive oil and heat it on medium, add the onions and let them cook until they become transparent, add the garlic and the bacon let it turn golden and add the vegetables. Sauteed for 5 minutes, then add the peas, stirring occasionally until the peas become tender. Add the chicken broth and increase the heat to high and bring it to boil, then low it the heat back to low medium. Let simmer for 2.5 hours to 3 hours. It should be mushy and unified, so add water and let it reduced several times until it acquired the desired consistency. It should not be too thick because it would get thicker when it cools off. Put it aside for a few minutes and serve. If you want to freeze it, you have to let it see for a hour or two to cool off first, then pour it until individual containers. You could garnish it with any fresh herb.
Enjoy!!!
